I had participated in a dessert potluck at one of my client's company and had taken some lemons that someone had brought and decided to make lemon cupcakes with lemon frosting. The cupcakes turned out well, it wasn't too dense.
I had some left over lemons and was watching Giada De Laurentiis this morning so I decided to make lemon ricotta cookies. The recipe called for a lemon glaze, but I decided to jazz it up by adding some cointreau. The cookies are fluffy and light.
And I wanted to try to bake something out of my comfort zone so I made black and white checker cookies...I need to do a better job piecing the cookies so they're more even. I also think I'll add more sugar than the recipe calls for because they didn't turn out sweet enough.

Okay, so confession time . . . I ended up eating 1 1/2 of your yummy citrusy lemon "cupcapes". I shared the last 1/2 with Kaia, but clearly LOVED the light, moist loveliness and thought it matched perfectly with the spring weather we were blessed with last week! Yummo, but not good for the tummo, as I just returned from a rather disappointing trip to Gilroy where postpartum shopping proved once again en exercise in futility! :)
